- 1 l water
- 500 g tomatoes
- 15 basil leaves
- 1 shallot

- 125 g guanciale or good quality bacon
- 125 g scamorza cheese or Mozzarella or Provolone

Pour 1 l water into the MicroCook Round 2,25L*, cover and microwave for 7 min. at 600 watts.

Add the tomatoes and microwave for another 1 min. at 600 watts. Allow tomatoes to cool. Once cooled, peel and remove seeds and cut into large pieces.

Using the SpeedyMando, slice the shallot. In a medium size bowl, combine shallot, tomatoes, salt, pepper, olive oil and basil and set aside.

Place pasta in base Pasta Maker Round, pour water until the water level line in the 4th window and microwave uncovered for 17-20 min. at 900 watts (for a cooking time estimate for cooking time on package of 11 min).

In EZ Shaker 350 ml, place egg and egg yolks, saffron, grated pecorino, salt and pepper, cover and shake to fully mix.

Cut guanciale into thin strips and place it into the MicroCook Round 2.25L, cover and microwave for 3 min. at 600 watts.

Drain pasta using the Pasta Maker Cover, setting aside some pasta water. Immediately pour the content of EZ Shaker into cooked pasta and mix well using the Silicone Spatula. If necessary, add small amounts of cooking water for a creamy result. Add the guanciale and scamorza cheese, stir to combine.

Serve with tomato and onion mixture on top of pasta and serve immediately.
